Ken's 3 Vinegar Carolina Sauce
This recipe of mine is a twist on the traditional North Carolina style BBQ Sauce. It is a vinegar-based sauce with a touch of heat, and is quickly becoming a family favorite at our annual Pig Roast. This is a great barbecue sauce on chopped pulled pork, which is how this sauce is typically used.

Prep Time: 5 minutes
Cook Time: 30 minutes

Ingredients:
• 2 cups white vinegar
• 1 cup balsamic vinegar
• 1 1/2 cups cider vinegar
• 1 1/2 cups Heinz ketchup
• 1 1/2 cups water
• 3 1/2 tablespoons white sugar
• 3 teaspoons kosher salt
• 3/4 teaspoon red pepper flakes
• 1 1/2 tablespoons onion powder

Preparation:
Combine all ingredients in a saucepan over a medium heat. Stir constantly for 10 minutes. Reduce heat to low and simmer for 20 minutes, stirring occasionally. Allow to cool. Store in an airtight container. Refrigerate.

Kansas City Barbecue Sauce
This variation of the traditional Kansas City BBQ Sauce is a thick sweet sauce with a touch of heat to give it a little kick. This is a great barbecue sauce on BBQ ribs.

Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients:
• 1 1/4 cup ketchup
• 1 cup water
• 1/3 cup cider vinegar
• 1/4 cup dark brown sugar
• 2 tablespoons molasses
• 1 tablespoon onion powder
• 1 tablespoon garlic powder
• 1 tablespoon black pepper
• 1 teaspoon celery salt
• 1 teaspoon allspice
• 1 teaspoon cayenne

Preparation:
Combine all ingredients in a saucepan over a medium heat. Stir constantly for 5 minutes. Reduce heat to low and simmer for 20 minutes, stirring occasionally. Sauce should be thick. Allow to cool. Store in an airtight container. Refrigerate.

St. Louis Barbecue Sauce
St. Louis Barbecue Sauce is thinner and has more of a tangy flavor than its Kansas City cousin. Being at the crossroads St. Louis style barbecue has many influences, so there are a number of ways of making this style sauce.

Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients:
• 2 cups ketchup
• 1/2 cup water
• 1/2 cup apple cider vinegar
• 1/4 cup brown sugar
• 3 tablespoon yellow mustard
• 1 tablespoon onion powder
• 1 tablespoon garlic powder
• 1 teaspoon cayenne

Preparation:
Combine all ingredients in a saucepan over a low heat. Stirring occasionally and simmer for 20 minutes. Sauce should be thin, but not watery. Allow to cool. Store in an airtight container and refrigerate. Sauce is better if allow to sit for a day.

Spicy Apricot Barbecue Sauce
This is an excellent barbecue sauce for pork and chicken.

Prep Time: 20 minutes
Cook Time: 2 hours

Ingredients:
• 2 pounds apricots, pitted and halved
• 3 large tomatoes, halved
• 3 cups brown sugar
• 2 cups cider vinegar
• 1/2 cup dry white wine
• 1 onion, chopped finely
• 3 cloves garlic, minced
• 2 tablespoons soy sauce
• 2 teaspoons hot sauce
• 2 teaspoons Dijon mustard

Preparation:
Place all ingredients in a large stockpot and bring to a boil. Reduce heat and simmer for 1 1/2 to 2 hours. When sauce has reduced, strain through a sieve. Use immediately or store in an airtight container for up to 4 weeks.

Horseradish Barbecue Sauce
This sauce works really well on chicken and pork ribs.

Prep Time: 6 minutes
Cook Time: 15 minutes

Ingredients:
• 1 cup melted butter
• 1/2 cup cider vinegar
• 1/2 cup ketchup
• 1/4 cup fresh lemon juice
• 1/4 cup prepared horseradish
• 2 teaspoons Worcestershire sauce
• 1/2 teaspoon hot sauce
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper

Preparation:
Place all ingredients in a medium saucepan and bring to a boil. Reduce heat and allow sauce to simmer for 10-15 minutes.

Chipotle and Red Wine Barbecue Sauce
This sauce can be used as a serving sauce as well as a basting sauce. It works well on just about any meat.

Prep Time: 10 minutes

Ingredients:
• 1/2 cup ketchup
• 1/3 cup red wine, preferably dry
• 1 tablespoon olive oil
• 1 tablespoon soy sauce
• 1 tablespoon brown sugar
• 1 tablespoon apple cider vinegar
• 1 teaspoon Worcestershire sauce
• 1 teaspoon garlic powder
• 1/4 teaspoon cumin
• 1/4 teaspoon chipotle chile powder

Preparation:
In a medium saucepan, add olive oil, garlic, chipotle powder, and cumin. Allow to heat through, while stirring, for 1 minute. Add red wine and brown sugar. Simmer for 2-3 minutes. Add in soy sauce, vinegar, ketchup, and Worcestershire sauce. Simmer for 2 minutes more. Remove from heat, allow to cool slightly before using.

Alabama White Barbecue Sauce
This traditional Alabama Barbecue Sauce uses Mayonnaise as its base rather than tomato sauce, vinegar, or any of the other traditional barbecue sauce bases. Like many barbecue sauces you want to apply this only at the very end of your grilling or smoking. It will breakdown and separate if it is heated too long. Use this sauce on chicken and turkey. It is also good on pork. Alabama White Barbecue Sauce has a tangy flavor that is a great addition to grilled foods.

Prep Time: 20 minutes

Ingredients:
• 1 cup mayonaise
• 1 cup cider vinegar
• 1 tablespoon lemon juice
• 1 1/2 tablespoons black pepper
• 1/2 teaspoon salt
• 1/4 teaspoon cayenne

Preparation:
Mix ingredients together and refrigerate for at least 8 hours before using. Brush lightly over chicken, turkey or pork during the last few minutes of grilling. This barbecue sauce is also great as a dipping sauce so set some aside before you start grilling to serve on the table.

Coca-Cola Barbecue Sauce
You might not think of a cola as the base for a barbecue sauce, but the sweetness of the soda helps to enhance the flavors of the sauce. You can reduce the calories of this sauce with diet soda, but it will change the flavor.

Prep Time: 10 minutes
Cook Time: 1 hour

Ingredients:
• 2 cups Coca-Cola (or similar cola)
• 2 cups ketchup
• 1/2 cup white vinegar
• 1/2 onion large onion, finely chopped
• 1 1/2 tablespoons black pepper
• 1/4 cup brown sugar
• 3 tablespoons salt
• 3 tablespoons chili powder

Preparation:
Mix all ingredients in a saucepan and bring to a boil. Reduce heat to a low simmer and cook slowly for 1-2 hours, stirring occasionally.

Sweet Cherry Barbecue Sauce
This sweet barbecue sauce is delicious. Try it on chicken. Remember, since this barbecue sauce has a good dose of sugar in it you don't want to put it on foods while they are cooking because it will burn quickly. You can add it right on the end as you are getting ready to remove items from the grill.

Prep Time: 20 minutes
Cook Time: 5 minutes

Ingredients:
• 2 cups pitted and halved fresh sweet cherries
• 2 tablespoons orange juice
• 2 tablespoons sherry
• 1 tablespoon sugar
• 1 tablespoon cold water
• 2 teaspoons cornstarch
• 1 teaspoon grated orange peel
• 3/4 teaspoon Dijon style mustard
• 1/4 teaspoon salt

Preparation:
Combine cherries, orange juice, sugar, orange peel, mustard and salt in a saucepan. Cover and simmer for about 5 minutes. In a small bowl, combine water and cornstarch and slowly stir into saucepan, stirring constantly. Continue simmering until the sauce thickens. Store for up to one week in the refrigerator. This sauce works great on chicken.

Spicy Root Beer Barbecue Sauce
If you can use cola in a barbecue sauce, why not use root beer? This sauce works really well on poultry and pork.

Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients:
• 1 cup root beer
• 1 cup ketchup
• 1/2 cup orange juice
• 3 tablespoons Worcestershire sauce
• 2 tablespoons fresh lemon juice
• 2 tablespoons brown sugar
• 1 tablespoon honey
• 1 clove garlic, minced
• 1/2 teaspoon lemon zest
• 1/2 teaspoon onion powder
• 1/2 teaspoon ground ginger
• 1/8 teaspoon cayenne pepper
• salt

Preparation:
Place all ingredients in a medium saucepan and bring to a boil. Reduce heat and allow to simmer for 20 minutes, stirring occasionally. Season with salt. Remove from heat and allow to cool. Sauce can keep in refrigerator for up to 2 weeks.

Sweet Bourbon Sauce
This tomato based sauce has a sweet yet tangy flavor from the bourbon. This is a great barbecue sauce for just about anything but is particularly good on beef.

Prep Time: 10 minutes

Ingredients:
• 3/4 cup ketchup
• 1/3 cup maple syrup
• 1/4 cup vegetable oil
• 1/4 cup bourbon
• 2 tablespoon cider vinegar
• 2 tablespoon Dijon-style mustard

Preparation:
Combine all ingredients together in a medium bowl until well mixed.
